Ingredients
  

  • 1 lb ground chicken
  • 2 tablespoons olive oil
  • 1 yellow onion diced
  • 1 red bell pepper diced
  • 3 garlic cloves minced
  • 1 14.5 oz can diced tomatoes
  • 1 15 oz can black beans drained and rinsed
  • 1 15 oz can kidney beans, drained and rinsed
  • 1 cup chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper optional
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lime
  • 1/2 cup shredded cheddar cheese optional
  • Toppings: sour cream, green onions, cilantro, avocado slices, tortilla chips, etc. optional

Instructions
 

  • In a large Dutch oven or stockpot, heat olive oil over medium heat.
  • Add ground chicken and cook until browned, breaking it apart with a wooden spoon (about 5-7 minutes).
  • Stir in onion, bell pepper, and garlic. Sauté the vegetables until they are softened, about 5 minutes.
  • Add chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper. Cook for 1-2 minutes to release the spices' aroma.
  • Pour in the diced tomatoes, black beans, kidney beans, and chicken broth. Stir to combine.
  • Bring to a simmer and let cook uncovered for 20-25 minutes, stirring occasionally.
  • Squeeze lime juice into the chili and adjust seasonings as needed.
  • Serve hot with your favorite toppings!
