- 1 lb ground chicken
- 2 tablespoons olive oil
- 1 yellow onion diced
- 1 red bell pepper diced
- 3 garlic cloves minced
- 1 14.5 oz can diced tomatoes
- 1 15 oz can black beans drained and rinsed
- 1 15 oz can kidney beans, drained and rinsed
- 1 cup chicken broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper optional
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lime
- 1/2 cup shredded cheddar cheese optional

In a large Dutch oven or stockpot, heat olive oil over medium heat.
Add ground chicken and cook until browned, breaking it apart with a wooden spoon (about 5-7 minutes).
Stir in onion, bell pepper, and garlic. Sauté the vegetables until they are softened, about 5 minutes.
Add chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper. Cook for 1-2 minutes to release the spices' aroma.
Pour in the diced tomatoes, black beans, kidney beans, and chicken broth. Stir to combine.
