Ingredients
  

  • 2 cups boneless skinless chicken breast, diced
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon white pepper
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon MSG optional for authentic flavor
  • 2 large eggs
  • 1/2 cup water
  • Vegetable oil for frying

Instructions
 

  • Marinate the Chicken: Combine diced chicken, buttermilk, garlic powder, onion powder, and white pepper in a bowl. Cover and chill for a minimum of 30 minutes.
  • Prepare the Coating: In a bowl, mix flour, cornstarch, baking powder, salt, and MSG (if using). In a separate bowl, whisk together eggs and water.
  • Coat the Nuggets: Remove chicken from the marinade. Dip each piece into the flour mixture, then the egg wash, and back into the flour mixture for a double coating.
  • Fry the Nuggets: Heat oil in a deep fryer or pot to 350°F (175°C). Fry the nuggets in batches for 3-4 minutes until golden. Take them out and drain on a wire rack or paper towels.
  • Optional Second Fry: For extra crispiness, fry the nuggets again for 1-2 minutes before serving.
  • Serve: Pair with your favorite dipping sauces like sweet and sour, honey mustard, or barbecue sauce.
