Ingredients
  

  • 2 cups cooked chicken breast diced or shredded
  • ½ cup seedless grapes halved
  • ½ cup chopped apples e.g., Honeycrisp or Fuji
  • cup chopped celery
  • ¼ cup chopped walnuts or pecans lightly toasted
  • ¼ cup dried cranberries or raisins
  • ½ cup mayonnaise or Greek yogurt for a lighter version
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions
 

  • In a large mixing bowl, combine the diced chicken, grapes, apples, celery, nuts, and dried cranberries.
  • In a small bowl, mix the mayonnaise (or Greek yogurt), lemon juice, salt, and pepper until well blended.
  • Pour the dressing over the chicken mixture and gently toss until everything is evenly coated.
  • Chill in the refrigerator for at least 15 minutes for best flavor.
  • Serve on a bed of lettuce, in a sandwich, or with crackers.
  • Garnish with fresh parsley if desired.
