Ingredients
  

  • 2 cups cooked shredded chicken (rotisserie chicken works well)
  • 4 cups tomato sauce or crushed tomatoes
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon red pepper flakes optional for heat
  • 1 cup heavy cream or coconut milk
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste

Instructions
 

  • Sauté Vegetables: Heat olive oil or butter in a large pot. Add chopped onion and garlic, sautéing for 3-4 minutes until softened.
  • Add Tomato and Chicken: Stir in tomato sauce (or crushed tomatoes), shredded chicken, smoked paprika, cumin, and red pepper flakes. Simmer for 10-12 minutes.
  • Blend for Smoothness: Use an immersion blender to blend the soup until smooth, or transfer to a regular blender.
  • Add Cream and Flavorings: Return the soup to heat and stir in the heavy cream (or coconut milk). Add salt, pepper, and any optional ingredients based on your variation. Simmer for an additional 5 minutes.
  • Serve: Serve hot, garnished with fresh herbs or toppings of choice.
